Lemon - Yuzu Tart with Torched Meringue

Our answer to the classic tarte au citron: a curd combining lemon with Japanese yuzu, which gives a deeper, more complex citrus, topped with a cloud of torched Swiss meringue. A dessert for those who always asked for 'less sugar' with a classic lemon meringue.
