Only truly ripe bananas go into this loaf - hence the moistness and natural sweetness, which we boost with brown sugar and cinnamon. Pecans inside, and on top a caramelised banana that looks exactly as good as it tastes. Slice it, warm it up - and suddenly it's Sunday.
